Pat shrimp dry with paper towels to remove excess moisture. Transfer to a mixing bowl and drizzle with olive oil. Season evenly with garlic powder, smoked paprika, onion powder, salt, black pepper, and red pepper flakes if using. Toss to coat thoroughly.

Set air fryer to 400°F and preheat for 3 minutes. Lightly spray basket with cooking spray if necessary to prevent sticking.

Arrange shrimp in a single layer within the air fryer basket; cook in batches if needed. Air fry for 6 to 8 minutes, shaking or flipping halfway through, until shrimp are pink, curled, and edges are slightly crisp. Remove and squeeze fresh lemon juice over shrimp.

In a small bowl, whisk together Greek yogurt or mayonnaise, ketchup, Dijon mustard, garlic powder, lemon juice, and paprika. Chill until serving.

Serve shrimp hot with prepared dipping sauce, over salad greens, in tacos, or with rice. Garnish with chopped parsley, green onion, or lemon wedges as desired.
