01 - 2 cups shredded zucchini (approximately 2 medium zucchini, ends trimmed, skin left on)
02 - 1 large egg
03 - 1/2 teaspoon salt
04 - 1/2 teaspoon baking powder

06 - 1/2 teaspoon onion powder
07 - 1/2 teaspoon Italian seasoning
08 - 1/4 teaspoon red chili flakes
09 - 1/2 cup all-purpose flour
10 - 1 tablespoon olive oil or non-stick cooking spray, for air fryer basket and brushing

# Steps to Follow:

01 - Grate zucchini using a box grater or food processor. Place shredded zucchini in a cheesecloth, clean kitchen towel, or several layers of strong paper towels. Squeeze out as much excess moisture as possible.
02 - Transfer the zucchini to a medium mixing bowl. Add the egg, salt, baking powder, garlic powder, onion powder, Italian seasoning, chili flakes, and flour. Stir until all ingredients are thoroughly combined.
03 - Scoop the batter and form into small patties, about 2 inches in diameter. You should have 9 to 10 fritters.
04 - Set air fryer to 350°F (175°C) and preheat for 2 to 5 minutes according to manufacturer instructions.
05 - Line the air fryer basket with aluminum foil or parchment paper for easier cleanup, if desired. Lightly brush or spray with olive oil.
06 - Place shaped fritters in a single layer in the air fryer basket, leaving space between each for airflow. Brush or lightly spray tops with olive oil.
