Grate zucchini using a box grater or food processor. Place shredded zucchini in a cheesecloth, clean kitchen towel, or several layers of strong paper towels. Squeeze out as much excess moisture as possible.

Transfer the zucchini to a medium mixing bowl. Add the egg, salt, baking powder, garlic powder, onion powder, Italian seasoning, chili flakes, and flour. Stir until all ingredients are thoroughly combined.

Scoop the batter and form into small patties, about 2 inches in diameter. You should have 9 to 10 fritters.

Set air fryer to 350°F (175°C) and preheat for 2 to 5 minutes according to manufacturer instructions.

Line the air fryer basket with aluminum foil or parchment paper for easier cleanup, if desired. Lightly brush or spray with olive oil.

Place shaped fritters in a single layer in the air fryer basket, leaving space between each for airflow. Brush or lightly spray tops with olive oil.
