Asian Mushroom Ramen Noodles (Printer-Friendly)

# What You’ll Need:

→ Noodles

01 - 2 packets instant ramen noodles, uncooked, seasoning discarded

→ Vegetables

02 - 14 ounces sliced mushrooms (any variety)
03 - 5 green onions, cut into 2-inch segments, whites and greens separated
04 - 2 garlic cloves, minced

→ Oils

05 - 1.5 tablespoons vegetable oil or neutral-flavored oil
06 - 2 teaspoons sesame oil (toasted preferred)

→ Liquids

07 - 1 1/4 cups water, plus additional as needed

→ Sauce

08 - 1 tablespoon dark soy sauce
09 - 1 tablespoon oyster sauce (or hoisin sauce as alternative)
10 - 2 teaspoons hoisin sauce (or additional oyster sauce)
11 - 1 tablespoon mirin (substitute: Chinese cooking wine, dry sherry, or non-alcoholic option by replacing water with 1/2 cup water plus 3/4 cup low-sodium chicken broth and omitting mirin)

# Steps to Follow:

01 - Combine dark soy sauce, oyster sauce, hoisin sauce, and mirin in a small bowl. Set aside.
02 - Cut green onions into 2-inch pieces, separating the white and pale green parts from the green tops.
03 - Heat vegetable oil in a large skillet over high heat. Add sliced mushrooms and cook for 3 minutes until they begin to brown.
04 - Add minced garlic and sesame oil to the skillet. Continue cooking until mushrooms and garlic are golden and fragrant.
05 - Stir in the prepared sauce and the white parts of the green onions. Cook for 1 minute until mushrooms are caramelized and glazed.
06 - Push mushrooms to the side of the skillet to create a well. Pour in water, add noodle blocks, and cook for 45 seconds. Flip noodles, cook for another 30 seconds, then break them apart.
07 - Add the green parts of the green onions and toss everything together. Add more water if necessary to achieve a saucy consistency. Serve immediately.
