01 -
Preheat oven to 425°F and line a baking sheet with foil. Slice tops and bottoms off onions, peel, and halve. Gently separate the two outer layers from each half to form cups.
02 -
In a large bowl, combine ground beef, breadcrumbs, egg, milk, 3 tablespoons BBQ sauce, salt, pepper, garlic powder, onion powder, and paprika. Mix until just combined, then chill for 15 minutes.
03 -
Scoop a portion of the meat mixture, flatten, insert a cheese cube, and shape into a sealed meatball. Ensure cheese is fully enclosed.
04 -
Wrap each meatball with two onion shells, then cross-wrap tightly with two bacon slices. Place seam-side down on the baking sheet.
05 -
Bake for 30 minutes. Brush remaining BBQ sauce over the bombs and bake another 10–15 minutes until bacon is crisp and internal temperature reaches 160°F.
06 -
Let onion bombs rest 5 minutes before serving to allow juices to settle and centers to cool slightly.
