Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine mashed bananas with quick oats. Stir until fully incorporated. If desired, gently fold in chocolate chips, nut butter, honey, or cinnamon.

Using a large spoon, scoop approximately 2 tablespoons of dough per cookie onto the prepared baking sheet. Flatten each portion lightly with the back of a spoon or moistened fingertips, shaping into rounds. Cookies will not spread during baking.

Bake in the preheated oven for 15 minutes, or until the edges are firm and cookies appear lightly golden.
