Combine softened butter, minced garlic, chopped parsley, and salt in a small bowl until well mixed.

Heat olive oil in a skillet over medium heat, add chopped shrimp, and cook for 2-3 minutes until heated through. Remove from heat.

Spread garlic butter on one side of each bread slice. On the unbuttered side, layer mozzarella cheese, cooked shrimp, Parmesan cheese, and red pepper flakes if using. Top with another bread slice, buttered side facing out.

Heat a skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook for 3-4 minutes per side until golden brown and cheese is melted. Press gently with a spatula to assist melting.

Remove sandwiches from heat and allow to rest for 1-2 minutes before slicing. Serve with marinara sauce or tomato soup if desired.
