Set the Instant Pot to Sauté mode and allow it to heat up until ready to use.

Add olive oil to the pot, then add diced onion and minced garlic. Sauté for 3 to 4 minutes, stirring occasionally, until onions are softened and fragrant.

Arrange chicken leg quarters in the pot. Sprinkle with paprika, salt, and black pepper. Turn each piece to ensure even seasoning.

Pour chicken broth over the seasoned chicken. Use a spatula to gently mix the aromatics and ensure broth covers the bottom of the pot.

Close the Instant Pot lid. Set the valve to sealing position and cook on high pressure for 25 minutes.

Once the timer ends, carefully release the pressure according to manufacturer instructions, using either the natural or quick release method.

Open the lid, transfer chicken to plates, and serve hot with your choice of side such as rice or potatoes. Optionally garnish with fresh herbs.
