01 - 3 pounds lean ground beef

# Steps to Follow:

01 - Preheat oven to 350°F and spray a large 3-quart casserole dish with non-stick cooking spray.
02 - Place chopped celery in a microwave-safe dish with ½ cup water; cover and cook for 4 to 5 minutes until tender. Drain excess water.
03 - In a large skillet over medium-high heat, cook ground beef with chopped onions until beef is browned and onions are softened. Drain excess fat if needed.
04 - In a large mixing bowl, combine cooked celery, browned beef and onions, cream of tomato soup, cream of mushroom soup, cooked rice, and dry chow mein noodles. Stir until well mixed.
05 - Transfer mixture into the prepared casserole dish and evenly sprinkle with 3 tablespoons of soy sauce.
06 - Bake uncovered in preheated oven for 20 minutes until heated through.
07 - Remove from oven and garnish with additional dry chow mein noodles, extra soy sauce, and chopped green onions if desired. Serve warm.
