Spray a 5-6 quart oval slow cooker with nonstick cooking spray.

In a large bowl, mix shredded potatoes, condensed cheddar cheese soup, egg, salt, and pepper until well combined. Spread this mixture evenly in the bottom of the slow cooker.

In a large skillet over medium heat, brown and crumble ground beef with chopped onion until beef is no longer pink. Drain excess grease.

Stir Sloppy Joe sauce into the cooked beef and onion mixture.

Spoon the Sloppy Joe meat mixture evenly over the hash brown layer in the slow cooker.

Cover and cook on low for 4 to 4 1/2 hours.

About 10 minutes before cooking time is complete, sprinkle shredded cheddar cheese over the casserole. Replace the lid and allow cheese to melt.

Once cheese is melted, serve the casserole warm.
