# Steps to Follow:

01 - Heat a large cast iron skillet over medium heat. Add 1 tablespoon olive oil and 1 tablespoon garlic and herb butter. Once melted, add the Yukon Gold potatoes and season with ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper. Reduce heat to medium-low, cover, and cook for 10 to 12 minutes, stirring occasionally to prevent burning, until potatoes are fork-tender and golden brown.
02 - While potatoes are cooking, season the sirloin steak cubes with ½ teaspoon salt, ½ teaspoon pepper, and ½ teaspoon garlic powder.
03 - Push the cooked potatoes to one side of the skillet or remove them if concerned about burning. Add remaining 1 tablespoon olive oil and 1 tablespoon garlic and herb butter to the empty side and increase heat to medium-high. Add the seasoned steak bites and sear for 3 to 4 minutes per side until browned and cooked to preferred doneness. Cook in batches if necessary to avoid overcrowding. If cooking in batches, remove potatoes before searing steak.
04 - Reduce heat to medium-low. Add additional garlic and herb butter if desired, allowing it to melt and coat both steak and potatoes. Toss gently to evenly coat. Adjust seasoning to taste before serving.
