03 - 1 teaspoon kosher salt
04 - 1/2 teaspoon freshly cracked black pepper
05 - 1/2 teaspoon smoked paprika
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon onion powder

→ Cheese

08 - 120 grams (1 cup) shredded sharp cheddar cheese

→ Burger Sauce

09 - 60 ml (1/4 cup) mayonnaise
10 - 30 ml (2 tablespoons) ketchup
11 - 15 ml (1 tablespoon) dill pickle juice
12 - 30 grams (2 tablespoons) finely chopped pickles
13 - 1/4 teaspoon black pepper
14 - 1/4 teaspoon paprika

→ Optional Toppings

15 - Crunchy dill pickles, sliced
16 - Fresh tomato slices

# Steps to Follow:

01 - In a small bowl, combine mayonnaise, ketchup, pickle juice, chopped pickles, black pepper, and paprika. Stir until smooth and creamy.
02 - Heat a large skillet over medium-high heat. Add ground beef, breaking it up with a spatula. Cook until browned and no longer pink, about 5-6 minutes. Season with salt, black pepper, paprika, garlic powder, and onion powder. Drain excess fat.
03 - Lay out tortillas and evenly distribute cooked beef over half of each. Sprinkle shredded cheddar cheese on top. Add pickles and tomato slices if desired. Fold tortillas in half, pressing down gently to seal.
04 - Place folded quesadillas in a dry skillet over medium heat. Cook until golden and crisp on one side, 3-4 minutes, then flip and cook until the other side is golden and the cheese has melted.
05 - Transfer quesadillas to a cutting board. Allow to cool slightly before slicing. Serve with extra burger sauce and optional toppings on the side.

# Helpful Hints:

01 - Warming tortillas before assembling prevents cracking and makes folding easier.
02 - Shredding cheese from blocks yields better melt and creaminess compared to pre-shredded varieties.
03 - Draining cooked beef well avoids soggy quesadillas.
