# Steps to Follow:

02 - In a large Dutch oven or heavy pot, melt butter over medium-high heat. Sear chicken thighs for 3–4 minutes per side until deep golden brown. Set browned chicken aside.
03 - To the pot, add onion, carrots, celery, and garlic. Sauté for 5 minutes, scraping up browned bits, until vegetables soften slightly.
04 - Sprinkle remaining flour over the vegetables and cook while stirring for 1–2 minutes to remove any raw taste.
05 - Gradually pour in chicken broth and vegetable broth, stirring briskly to prevent lumps. Bring mixture to a gentle simmer.
06 - Return browned chicken and diced potatoes to the pot. Add parsley, thyme, rosemary, sage, and adjust seasoning. Reduce to low and simmer, partially covered, for 35–40 minutes until chicken is fork-tender and potatoes are soft.
07 - Taste and adjust salt and pepper as needed. For a thicker stew, uncover and simmer an additional 10 minutes. Remove from heat and serve hot.
