# What You’ll Need:

→ Meat

01 - 4 pounds boneless pork loin roast, cut into 6 pieces

→ Vegetables and Aromatics

02 - 1 red onion, finely diced, divided
03 - 2 (7 ounce) cans diced green chiles, divided
04 - 2 cups mild salsa
05 - Chopped cilantro, for garnish
06 - Sliced lime, for garnish

→ Spices and Seasonings

07 - 2 tablespoons chili powder
08 - 2 tablespoons Goya Adobo seasoning
09 - 1 tablespoon paprika
10 - 2 teaspoons salt, or to taste

# Steps to Follow:

01 - Cut the pork loin roast into six pieces and finely dice the red onion, dividing it for later use.
02 - Place pork pieces, one can of diced green chiles, half of the diced red onion, salsa, chili powder, Adobo seasoning, paprika, water, and salt into the Instant Pot.
03 - Seal the Instant Pot and select manual mode. Set the timer for 50 minutes to cook under high pressure.
04 - Allow the pressure to release naturally for approximately 20 minutes before opening the lid.
05 - Use two forks to shred the pork pieces into smaller pieces directly in the pot, retaining the cooking liquid.
06 - Stir in the remaining can of diced green chiles and mix well.
07 - Ladle chili into bowls and garnish with chopped cilantro, remaining diced red onion, crumbled Cotija cheese, and lime slices.
