Cut the pork loin roast into six pieces and finely dice the red onion, dividing it for later use.

Place pork pieces, one can of diced green chiles, half of the diced red onion, salsa, chili powder, Adobo seasoning, paprika, water, and salt into the Instant Pot.

Seal the Instant Pot and select manual mode. Set the timer for 50 minutes to cook under high pressure.

Allow the pressure to release naturally for approximately 20 minutes before opening the lid.

Use two forks to shred the pork pieces into smaller pieces directly in the pot, retaining the cooking liquid.

Stir in the remaining can of diced green chiles and mix well.
