John Wayne Beef Biscuit (Printer-Friendly)

Hearty ground beef casserole with biscuit crust, cheddar, jalapenos, and creamy layers for a bold and satisfying dish.

# What You’ll Need:

→ Meat

01 - 1 lb lean ground beef (80-85% lean)

→ Seasoning

02 - 1 packet taco seasoning mix
03 - Water as per seasoning packet instructions

→ Crust

04 - 1 can (16 oz) large flaky refrigerated biscuits

→ Dairy

05 - 1/2 cup sour cream (full fat)
06 - 1/2 cup mayonnaise (real mayo)
07 - 2 cups shredded sharp cheddar cheese, divided

→ Vegetables

08 - 1 medium onion, sliced
09 - 1 medium red bell pepper, sliced
10 - 2 medium firm ripe tomatoes, sliced
11 - 1/4 cup canned jalapeno slices, drained

# Steps to Follow:

01 - Preheat oven to 350°F and position the rack in the center. Spray a 13x9 inch glass baking dish with cooking spray. Arrange biscuit dough in a single layer, pressing to join and working dough halfway up the dish sides. Place dish on a baking sheet and bake for 12 to 15 minutes until edges are lightly golden. Remove and keep oven hot.
02 - Heat a skillet over medium heat. Brown ground beef until fully cooked and crumbly. Drain excess fat. Stir in taco seasoning and water according to packet instructions; cook until flavors meld. Transfer meat to a bowl and set aside.
03 - In a separate bowl, combine sour cream, mayonnaise, half of the shredded cheddar cheese, and half of the sliced onions. Mix until smooth and creamy. Reserve for layering.
04 - Return skillet to medium heat. Sauté remaining onions and sliced red bell pepper for 3 to 4 minutes until vegetables begin to soften but retain some crunch. Remove from heat.
05 - Layer the casserole by spreading the cooked taco meat over the par-baked biscuit crust. Top with sliced tomatoes, followed by sautéed peppers and onions, then drained jalapeno slices. Spoon the creamy cheese mixture evenly over everything and sprinkle remaining shredded cheddar on top. Bake uncovered for 30 to 40 minutes until biscuit crust edges are deeply golden and cheese topping is bubbly and melted.

# Helpful Hints:

01 - Monitor biscuit crust carefully during initial baking to prevent over-browning.
02 - Freshly shred cheddar cheese for optimal melting and flavor.
03 - Drain jalapenos well to avoid excess moisture in the casserole.
04 - This dish can be assembled ahead and refrigerated before baking.
05 - Leftovers keep refrigerated for up to three days and freeze well for two months.
