# Steps to Follow:

01 - Preheat the oven to 350°F. Lightly mist a 9 x 5-inch loaf pan with cooking spray and set aside.
02 - In a large mixing bowl, whisk together the egg, applesauce, sugar, orange juice, and orange zest until well incorporated. Stir in the melted butter.
03 - In a separate bowl, sift together the all-purpose flour, baking soda, aluminum-free baking powder, and salt. Whisk to combine.
04 - Add the dry ingredients to the wet ingredients and fold gently until just combined. Do not overmix. Fold in 1 cup of the halved cranberries.
05 - Pour the batter into the prepared loaf pan. Evenly distribute the remaining ¼ cup cranberries on top. Bake for 45 to 55 minutes, or until a toothpick inserted into the center comes out clean.
