02 - 1 medium yellow onion, diced

05 - 1 can (15 ounces) corn, undrained
06 - 1 can (10 ounces) Ro-Tel tomatoes with green chilies, undrained
07 - 1 can (15 ounces) diced tomatoes, undrained

08 - 1 package (1 ounce) taco seasoning mix
09 - 1 package (1 ounce) ranch dressing mix

→ Liquid

10 - 2 cups water

# Steps to Follow:

01 - In a large skillet over medium-high heat, brown the ground beef with the diced onion until the meat is fully cooked and the onions are soft. Drain off excess fat if necessary.
02 - Transfer the cooked beef and onion mixture to a slow cooker. Add pinto beans, kidney beans, corn, Ro-Tel tomatoes, diced tomatoes, taco seasoning mix, ranch dressing mix, and water. Do not drain the canned goods; add with their juices.
03 - Set the slow cooker to high and cook for 1 to 2 hours. Afterward, reduce the heat to low and let the soup simmer for at least 2 additional hours to allow the flavors to blend.
04 - Ladle the hot soup into bowls. Top each serving with a dollop of sour cream, a sprinkle of shredded cheddar cheese, and fresh chives if desired.
