In a large bowl, mix ground chicken, panko breadcrumbs, egg, scallions, parsley, salt, black pepper, garlic powder, dried dill, and two tablespoons of Buffalo wing sauce until evenly combined. Form mixture into four equal patties.

Optionally cover and refrigerate patties for at least one hour to enhance flavor melding and improve firmness.

Preheat a nonstick grill pan or skillet over medium heat with a light mist of cooking spray. Cook patties for 5 minutes on one side, flip, and cook an additional 5 minutes until fully cooked through.

While patties cook, combine coleslaw mix with blue cheese dressing in a bowl and toss until evenly coated.

Layer a lettuce leaf on the bottom half of each bun, add a cooked patty, drizzle approximately 1 teaspoon of Buffalo wing sauce on each patty, top with ¼ cup blue cheese coleslaw, and finish with the top half of the bun.
