Heat olive oil in a large skillet over medium heat. Add diced green bell pepper and red onion; cook until softened and onions are translucent, approximately 5 minutes.

Incorporate long-grain white rice and Cajun seasoning into the skillet. Stir well to coat the rice and vegetables evenly.

Pour in low-sodium chicken broth and stir the mixture. Increase heat to bring to a rolling boil.

Reduce heat to low and cover the skillet with a lid. Allow the rice to simmer gently for 20 to 25 minutes, or until the broth is fully absorbed and the rice is tender.
