Cajun Spiced Rice (Printer-Friendly)

A savory blend of bell peppers, onion, and Cajun spices creates a flavorful, versatile rice dish.

# What You’ll Need:

→ Vegetables

01 - 1 medium green bell pepper, diced
02 - 1 medium red onion, diced

→ Liquids

03 - 4 cups low-sodium chicken broth

→ Spices & Seasonings

04 - 2 tablespoons Cajun seasoning

→ Grains

05 - 1 cup long-grain white rice

→ Oils

06 - 2 tablespoons olive oil

# Steps to Follow:

01 - Heat olive oil in a large skillet over medium heat. Add diced green bell pepper and red onion; cook until softened and onions are translucent, approximately 5 minutes.
02 - Incorporate long-grain white rice and Cajun seasoning into the skillet. Stir well to coat the rice and vegetables evenly.
03 - Pour in low-sodium chicken broth and stir the mixture. Increase heat to bring to a rolling boil.
04 - Reduce heat to low and cover the skillet with a lid. Allow the rice to simmer gently for 20 to 25 minutes, or until the broth is fully absorbed and the rice is tender.
05 - Remove from heat and let the rice rest, covered, for 5 minutes. Fluff with a fork before serving.

# Helpful Hints:

01 - Use low-sodium broth to better control the salt level, as Cajun seasoning often contains salt.
