Lay one tortilla flat. Place two slices of provolone on half, add a generous layer of shredded beef, then top with French fried onions. Roll tightly, tucking in sides, and brush inside edge with olive oil to seal.

Place roll ups seam-side down on the baking sheet. Brush tops and sides with remaining olive oil. Bake 8 to 10 minutes until golden, crisp, and cheese is melted.

Combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Simmer gently over medium heat for 3 to 4 minutes.

Allow roll ups to rest 2 minutes before slicing into halves or thirds. Serve warm with au jus for dipping.
