# What You’ll Need:

→ Tortilla Roll Ups

01 - 4 large flour tortillas (12-inch)
02 - 2 cups cooked shredded beef, slow-cooked or braised
03 - 8 slices provolone cheese (or mozzarella)
04 - 1 cup French fried onions
05 - 2 tablespoons extra virgin olive oil

→ Au Jus Dip

06 - 1 can (10.5 oz) beef consommé
07 - 1 cup water
08 - 1 tablespoon Worcestershire sauce
09 - 2 teaspoons low-sodium soy sauce
10 - ½ teaspoon onion powder
11 - ½ teaspoon garlic powder

# Steps to Follow:

01 - Preheat oven to 425°F. Line a rimmed baking sheet with parchment paper.
02 - Lay one tortilla flat. Place two slices of provolone on half, add a generous layer of shredded beef, then top with French fried onions. Roll tightly, tucking in sides, and brush inside edge with olive oil to seal.
03 - Place roll ups seam-side down on the baking sheet. Brush tops and sides with remaining olive oil. Bake 8 to 10 minutes until golden, crisp, and cheese is melted.
04 - Combine beef consommé, water, Worcestershire sauce, soy sauce, onion powder, and garlic powder in a small saucepan. Simmer gently over medium heat for 3 to 4 minutes.
05 - Allow roll ups to rest 2 minutes before slicing into halves or thirds. Serve warm with au jus for dipping.
