Crock Pot Turkey Chili (Printer-Friendly)

Slow cooked turkey chili with beans and veggies. Warm, hearty, and perfect for using leftover turkey.

# What You’ll Need:

→ Main Ingredients

01 - 4 cups cooked roast turkey, shredded or chopped
02 - 1 cup dried red kidney beans, rinsed and soaked overnight
03 - 1 can (10 ounces) diced tomatoes with green chiles, undrained
04 - 1 can (15 ounces) tomato sauce
05 - 1 can (14.5 ounces) diced tomatoes, undrained

06 - 1 cup yellow onion, finely chopped
07 - 1 green bell pepper, diced
08 - 2 celery ribs, diced
09 - 4 garlic cloves, minced

→ Seasonings & Spices

10 - 2 bay leaves
11 - 1 tablespoon Creole seasoning
12 - 2 tablespoons Mexene chili powder or substitute (see note)
13 - 1 teaspoon salt, to taste
14 - 1/2 teaspoon ground black pepper, to taste
15 - 1 tablespoon brown sugar, optional

# Steps to Follow:

01 - Place the cooked turkey into a food processor and pulse briefly until coarsely chopped into small, uniform pieces.
02 - Finely dice the yellow onion, green bell pepper, and celery. Mince the garlic cloves.
03 - Transfer the chopped turkey, soaked and drained kidney beans, undrained tomatoes with green chiles, tomato sauce, diced tomatoes, chopped onion, green bell pepper, celery, minced garlic, bay leaves, Creole seasoning, and chili powder to the slow cooker.
04 - Secure the lid and cook on high for 4-6 hours or on low for 6-8 hours, until the beans are tender and the flavors are well melded.
05 - Taste and season with salt and pepper as needed. For a milder acidity, stir in brown sugar if desired. Remove the bay leaves prior to serving.
06 - Ladle the chili into bowls and serve hot with optional accompaniments such as sour cream, shredded cheese, chopped cilantro, avocado slices, or corn chips.

# Helpful Hints:

01 - For best texture, chop turkey by hand if no food processor is available.
02 - Mexene chili powder can be substituted with 1 tablespoon chili powder, 1 tablespoon ground cumin, 1 teaspoon garlic powder, and 1/8 teaspoon cayenne pepper.
03 - If using canned kidney beans instead of dried, rinse and drain before adding. Reduce slow cooker time by 2 hours.
04 - To cut tomato acidity, add brown sugar or a diced carrot during cooking.
