This Italian Pasta Salad brings together a colorful combination of savory salami, spicy pepperoni, and creamy provolone cheese with fresh vegetables all tossed in a zesty Italian dressing. It’s a perfect dish for potlucks, family gatherings, or any time you want a crowd-pleaser that’s easy to make and full of flavor.
I first made this salad for a big fundraiser and it disappeared almost instantly proving it is as popular as it is delicious. I love that I can prepare it a day ahead which only helps the flavors deepen and makes entertaining so much easier.
Ingredients
- Rotini pasta: holds dressing nicely with its spirals look for bronzecut pasta for the best texture
- Salami: brings rich cured savory notes buy a good quality delistyle widely available at grocery stores
- Pepperoni: adds a bit of spice and classic Italian flavor choose thin slices for better mixing
- Provolone cheese: offers creamy mild meltability cubing from a block gives better texture than preshredded
- Italian dressing: the backbone of flavor homemade or bottled both work but quality matters
- Italian seasoning packet: adds aromatic herbs for depth using a mix with oregano basil and parsley is ideal
- Cherry tomatoes: juicy sweetness select firm ripe tomatoes that are vibrant red
- Green bell pepper: adds crisp freshness and color contrast choose firm peppers with no soft spots

Instructions
- Cook the Pasta:
- Cook spiral pasta according to the package instructions until just tender Drain well and rinse under cold water quickly to stop cooking This rinsing removes excess starch and prevents the pasta from sticking together which is key for a salad like this
- Coat with Dressing and Seasoning:
- Place the cooled pasta in a large mixing bowl Pour in the Italian dressing and sprinkle the Italian seasoning packet evenly over the top Stir thoroughly to ensure each piece of pasta is coated with flavorful dressing and herbs
- Add Meats and Vegetables:
- Add the diced salami pepperoni slices provolone cubes halved cherry tomatoes chopped green bell pepper and drained black olives to the bowl Stir gently to combine all ingredients evenly distributing the colors and flavors through the salad
- Chill and Serve:
- Cover the bowl tightly with plastic wrap or a lid Refrigerate for at least three to four hours to allow the flavors to meld beautifully Before serving give the salad a good stir Taste and add more dressing if needed to refresh the seasoning
Provolone cheese is my go to because its mild creaminess balances the savory meats without overpowering the salad One of my favorite memories is bringing this dish to a summer picnic where it was declared the star by everyone
Storage Tips
Store leftovers in an airtight container and refrigerate for up to three days Because of the dressing and meats this salad holds up well without losing texture or flavor Stir it before serving again and add a splash of Italian dressing if it seems dry
Ingredient Substitutions
Mozzarella cheese can replace provolone if you prefer a milder taste or softer texture For a vegetarian version omit the salami and pepperoni and add more olives or roasted red peppers for richness You can also swap rotini for bowtie or penne pasta depending on what you have
